Oh, I am a sucker for mashed potatoes! Yes, you can eat mashed potatoes when you’re dieting. And you can eat them without worry!

I’ve tried several light recipes and they just never seem to fit the bill. I like creamy and flavorful (um, see above!) and this recipe really delivers. The freshly grated Parmesan cheese gives them a nice flavor and the buttermilk makes them extra creamy and makes up for the lack of butter. I know, you’re thinking, “mashed potatoes without butter? Are you insane, woman?” No, I am not. Try this recipe and let me know what you think.

Lightened Up Parmesan Mashed Potatoes

  • 10 medium potato(es), red (about 2 1/2 lbs)
  • 1/2 cup(s) buttermilk, warmed
  • 3 tbsp Parmesan cheese, strong-flavored, grated
  • 1/4 cup(s) chives, chopped
  • 1 tsp table salt
  • 1/8 tsp black pepper, freshly ground, or to taste

Place potatoes in a large pot and cover with an inch of water; bring to a boil, reduce heat, simmer and cook until fork-tender, about 30 minutes. Drain and return potatoes to pot.

Mash potatoes with a potato masher. Stir in remaining ingredients and mix well to combine. Yields about 2/3 cup per serving.
