Hello Sisters (and Brother)! For this week’s mini-challenge, we’re going to revisit the 5 servings of fruits and vegetables for 5 days challenge. And just to spice things up, we’re going to have another recipe carnival? Spring is the time when all the ranchers in my area are rounding up the goats and sheep, so we’ll call this carnival a roundup! I like the sound of that!!
This Roundup is going to focus on, you guessed it, fruit and vegetable recipes. All of us have been trying to incorporate more fruits and vegetables into our diet, and we’ve had some wonderful successes!! I’m so proud of all of you. Vegetables can get kind of boring though, and there don’t seem to be too many fruit recipes out there, so why don’t you share you favorite recipe with us? Even if you don’t have a recipe, why don’t your share your favorite vegetable or fruit and preparation method?
For example, right now I’m on a frozen mixed vegetables kick (exciting, I know!), and I love to steam them in the microwave using my Pampered Chef micro-steamer (if you ain’t got one, get one! It’s my new favorite thing!), then I spray them with some I Can’t Believe It’s Not Butter spray, and sprinkle some Parmesan cheese on them. Voila! Frozen mixed veggies a la Christy :)
