Rosemary Sweet Potato Steak Fries

Who here likes fries?  I know my family sure does.  Sunday is a family day at my parents house.  It has been for years.  A lot of times, fries are included with dinner.  For a long, long time I have avoided eating fries, and it’s kind of a bummer.  Okay, it’s a big bummer.  So, when I found this recipe in The Biggest Loser: Families Cookbook, I thought I’d give it a try.  (Can you tell I love this cookbook A LOT?)

What you’ll need:

  • 2 lbs sweet potatoes, peeled and cut into steak fry sized pieces
  • 1 1/2 tablespoons freshly minced garlic
  • 1 1/2 teaspoons dried rosemary
  • 2 teaspoons extra-virgin olive oil
  • 1/4 teaspoon salt or to taste

Preparation:

Preheat the oven to 450 degrees F. In a a large bowl, toss sweet potatoes with garlic, rosemary, olive oil, and salt.  Arrange in a single layer, not touching, on a large non-stick baking sheet.  Bake for 15 mins.  Turn pieces and bake 10 to 15 minutes longer or until tender.  Makes 6 servings.

Nutrition facts:  120 calories per serving, 2g protein, 24g carbohydrates, 2g fat, 0mg cholesterol, 4g fiber, 169mg sodium.

Can I just say how much I love this recipe?!  I really do!  I didn’t think I’d like it very much because I’m not a huge fan of sweet potatoes, but it’s really excellent!
