**Updated** Day 25 Giveaway – Weight Watchers!

APPLE CRISP

Servings: 8
Preparation Time: 15 min
Cooking Time: 75 min
Level of Difficulty: Easy

This dessert was devoured at our last recipe tasting. It’s great warm or cold. Even better with light vanilla ice cream.

Ingredients
4 large apple(s), peeled, cored, cut into 1/8-inch slices (6 cups sliced apples)
2 tsp fresh lemon juice
3/4 cup(s) packed light brown sugar, divided
2 Tbsp Minute Tapioca, or other brand
1 tsp ground cinnamon
1/4 tsp ground nutmeg, or freshly grated nutmeg (fresh preferred)
1/2 cup(s) all-purpose flour
4 Tbsp butter, melted
Instructions

* Preheat oven to 400ºF. Place rack in bottom third to middle of oven.

* In a large bowl, toss together apple slices, lemon juice, 1/4 cup sugar, tapioca, cinnamon and nutmeg; let stand for about 30 minutes.

* Spoon apple mixture into an ungreased 9-inch square baking dish, or glass or ceramic pie plate; cover loosely with aluminum foil and bake for 30 minutes.

* Meanwhile, to make topping, in a small bowl, combine flour with remaining 1/2 cup of sugar; mix until completely blended. Add melted butter; work in thoroughly with fingertips.

* After pie has baked for 30 minutes, remove from oven and discard foil. Sprinkle topping over apples and bake, uncovered, until apples bubble and topping turns golden, about 35 to 45 minutes. Cool at least 2 hours before serving. Slice into 8 pieces and serve. Yields 1 slice per serving.

Notes

* You can use any type of apples in this recipe. Try your favorite or a combination of several different ones.

    One thing to make some of the feasting better for me? Pumpkin Pie no crust, cool whip instead of heavy cream whipped up and mashed taters with no milk or heavy cream but some of the leftover boil water or a little chik broth.

    OohhH! I wish I had a good holiday trick! I will admit, I don't. I'm awful with the yummy holiday food, but will make a huge salad, and hope to fill up on some of that first!

    I plan to use lowfat ingredients whenever possible but most of all, I'm going for portion control. I love every dish and want to sample them but that's what I'll stick to....samples.

    I don't go nuts with lowering holiday dishes, but I make an effort to balance out my holiday gluttony with stricter eating the rest of the time! I picked a few of my favorite vegetable sides to go on the menu this year, and used at least a couple low-fat ingredients--so I may have regular cheese, but I at least used low-fat sour cream.

    Yams are sweet enough when roasted with a little olive oil, kosher salt and rosemary. No need for the marshmallows!

    I do a lot of substitutions - apple sauce for oil, nonfat greek yogurt for oil and when there is a lighter version of an ingredient like sour cream or milk, I use the light version and don't find a big difference in taste. Sometimes if you use the fat free version, it is too much of a deviation, but the "light" is usually great!

    i put extra veggies in my pasta salad, that way the chances of getting a bite of veggie instead of pasta is high.

  • I use splenda in place of sugar and I try and miz my reg. flour with whole wheat. Applesauce in place of oil...pumpkin sometimes!

  • I have started using the reduced fat creamed soups for things like my casseroles etc. I also have been using the reduced fat cream cheese for my cheesecakes :)
