Parmesan Tomatoes

I am trying to eat more fruits and veggies.  Really, I am.  I love eating my veggies raw but sometimes, I like to mix it up and gasp! cook my veggies in a variety of ways.  Here is but one of those ways!

Oh yeah, they are quick and easy to make and taste so fresh and delicious : ).

Parmesan Tomatoes (source: Taste of Home Comfort Food Diet Cookbook)

Ingredients

  • 3 large tomatoes
  • 1 tablespoon chicken bouillon granules
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon butter

Directions

  1. Remove stems from tomatoes; cut in half widthwise.  Place cut side up in an 11-in x 7-in baking dish coated with cooking spray.
  2. Sprinkle with bouillon and Parmesan cheese; dot with butter.  Bake, uncovered, at 400 degrees for 20-25 minutes or until heated through.

Yield: 6 servings

Nutrition Facts:  1 tomato half equals 54 calories, 3 g fat (2 g saturated fat), 1 g fiber, 2 g protein.
