Thursday Three’s: The Food Edition

I am so excited to write this Food Edition of Thursday Threes!

I love food- what “free” time I have is spent scouring websites, cookbooks, cooking magazines, looking for those recipes that sound interesting to me.  I love to cook and I love to eat.  These two simple phrases makes it imperative for me to find “healthy” options as much as possible.

Also, I stand here before you to let you know that YES, you can still eat wonderfully tasting foods that are healthy for you.  Really.

Would I lie to you?

So today, I bring you this “close to my heart”, special Food Edition of the Thursday Threes.

1.  Recipes- my top three recipes on our site that I think YOU must check out right. this. very. second.  Just so you know, it was very difficult for me to narrow this down to three because there are so MANY good recipes that we have shared with you.  Maybe on a different day, I will share my favorite side dishes or desserts! Today, though, I’m all about Main Dishes.

  • Fresh Tomato, Basil and Cheese Pizza- what’s not to like about pizza?  This recipe doesn’t use much cheese at all but definitely makes up for that loss by piling on fresh basil and Roma tomatoes.
  • General Tsao’s Chicken- if you scroll down to the bottom of the page on the main Shrinking Jeans site, you will see a section titled “Most Popular” (scroll all the way down…..).  This recipe is the ONLY recipe to make the Top 10 list of MOST VIEWED posts.  Trust me, it is that good.
  • Lemon-Ginger Fried Chicken- this another favorite of mine because um, hello- lemon+ginger+”fried” = a party in my tummy

2.  Food – these are my top 3 food items of choice that I currently stock in my house at all times. LOVE THEM!

  • Splenda with Fiber. Some might not like Splenda, but I do.  Now that Splenda has come out with a Fiber product, I like it even more.
  • Kellogg’s Fiber Plus Bars.  OMG, these taste SO GOOD and they are low calorie and HIGH in Fiber.  Yum, yum, and more yum.
  • Green Giant Boxed Vegetables, Health Blends, and  Valley Fresh Steamers. LOVE LOVE LOVE frozen veggies this time of year.  I pop a bag in the microwave for a few minutes and voila!, have veggies with every meal.  Sometimes, I will have 2-3 servings of frozen veggies in one sitting because I like them so much.   I will eat almost any veggies, but NOT brussel sprouts (yech!) nor chopped spinach (only fresh spinach will do.

3.  Websites/Magazines. Like I mentioned above, I spend an insane amount of time looking for recipes, reading magazines and cookbooks and the like.  Here are my favorite three magazines/cookbooks (for now):

  • Cooking Light- I love the magazine Cooking Light and I also love the recipe website that coincides with it.  I have made MANY recipes from either/both.  Nutritional information is included on all recipes.  Click here for TWO free preview issues of the magazine (on right hand side).
  • Healthy Cooking Magazine- another favorite of mine is this one.  The pictures are pretty, the recipes aren’t too complicated and once again, all nutritional facts are included on each recipe.  Even better, each issue has “makeover recipes” of popular dishes- I call these “health-i-fied”" makeovers!  Click here for a free issue of Healthy Cooking.
  • Taste of Home Comfort Food Diet Cookbook- I love this cookbook and I talk about it here (tons of recipes with pictures and nutritional information, tips and tricks, menu planning, inspirational weight loss stories)

    I REALLY want to contribute more to this thread, but don't feel like I have the time to write a full post with recipes et al! I will take the time to second the full-family approval of WW's General Tsao's Chicken! Also, their Chicken Parmesana is now my husband's new fave!

    The one new thing I can add, however, is that if you've never visited FatFreeVegan, you're missing out! Yes, vegan, but plenty of the meals you already eat are, too! Susan includes WW points on many of her recipes, but even the ones that don't I find to be extremely WW-friendly.     Great post, Lisa!! I'm making the famous General Tso's Chicken right now!! YUMMY! It's definitely one of my go-to recipes!

    I also love Splenda with fiber, and frozen veggies, but you knew that!
