Sisterhood Bash Happy Hour: Appetizer Meatballs

Anyone else love meatballs as much as I do?  Especially when the meatballs are covered in a yummy sauce?  Before you know it, you could could consume 10-15 meatballs without even realizing it this has NEVER happened to me.  Anyhoo, I ran across this recipe and I think it has serious promise to be delicious AND not so bad for you.  If I didn’t already have dinner plans, I would whip this up tonight!

Appetizer Meatballs (Low Fat Country Cooking cookbook)

Ingredients

  • 1 pound ground round (but I would substitute the leanest hamburger meat I could find)
  • Egg substitute equivalent to 1 egg
  • 1/2 cup soft bread crumbs
  • 1/4 cup skim milk
  • 1/3 cup finely chopped onion
  • 1/2 teaspoon Worcestershire sauce

Sauce

  • 1/2 cup ketchup
  • 1/2 cup chopped onion
  • 1/3 cup sugar (personally, I would start with 1/4 cup suugar and see if that does the trick)
  • 1/3 cup vinegar
  • 1 tablespoon Worcesterhire sauce
  • 1/8 teaspoon pepper

Directions

  1. Combine the first six ingredients; mix well.  Shape into 1-in balls.  In a skillet over medium heat, brown meatballs; drain.  Place in a 2.5 qt baking dish.  Combine sauce ingredients.  Pour over meatballs.  Bake, uncovered, at 350 degrees for 50-60 minutes or until meatballs are done.  Yield: 4 dozen
