Strawberry-Mango Salsa

(Weight Watchers 20 Minute Recipes)

This colorful salsa scoops up nicely with baked cinnamon-sugar pita chips, but it can also freshen up grilled fish or chicken. A generous 3/4 cup serving has a points value of 1.

Ingredients

1 cup chopped strawberries

1 ripe mango, diced and peeled

3/4 cup finely chopped orange, yellow, or red bell pepper

2 tablespoons chopped fresh mint

1 teaspoon grated fresh orange rind

2 tablespoons fresh orange juice

1 1/2 teaspoons sugar

1/8 teaspoon crushed red pepper

Directions

Combine all ingredients in a medium bowl. Let stand at least 10 minutes before serving, or cover and chill until ready to serve. Yield: 9 servings (serving size: 1/4 cup)

Per Serving: Cal 27; Fat 0.2g; Fib 1g
