Taste of the Sisterhood: Margherita Pizza

[ 0 ] 11/17/2010 |

One of my favorite things in life is one of the simplest: pizza. But I think I like my own better than the delivery kind and you can try it out for yourself and let me know what you think!

The sauce is homemade, you use a yummy premade whole wheat crust, some fresh mozzerella and some fresh basil and it’s simple and delicious and takes about 20 minutes to make.

Here is my recipe:

Ingredients:
1 premade whole wheat crust
1 8 oz. ball of Sorrento Fresh Mozzerella (my personal fave)
2 sprigs of fresh basil, chopped
1 tbsp olive oil
Garlic powder

Homemade Sauce:
1/4 cup chicken broth
1 regular sized tomato (quartered and I use the tomatoes on the vine, so yummy)
1/4 of a regular sized onion (or about 1/4 cup onion) chopped
2 tbsp tomoto paste
2 tsp garlic
2 sprigs of fresh basil
pinch of Italian seasoning
salt and pepper to taste

Directions for sauce: Add all the ingredients to blender in order and blend. (Easy enough.)

Directions for pizza: Preheat oven to 400. Brush olive oil over the whole crust. Sprinkle garlic seasoning all over the crust, paying special attention to the edges (yum!) Spread the sauce all around the pizza starting from the middle and working your way outward, leaving one inch sauceless around the edges. Slice fresh mozzerrella and put around the pie (as pictured or however you want, really.) Sprinkle chopped basil around the top of the cheese.

Bake at 400 for 15-20 minutes or until cheese is melted and the crust is a light brown.

Enjoy! This is a family favorite, serve it up with a delicious spinach salad and voila! A light and yummy pizza dinner!
