Editors’ Weekly Round-up: Lots of stuff, a recipe & giveaway!
Happy Friday!! Be prepared, because I am going to overwhelm you with goodness today! There are so many things going on, and I had to share them with you!
First of all, our very own Social Sister Colleen is running in her very first 1/2 marathon this weekend AND she celebrated her ‘One Year Living Healthy Anniversary’ yesterday. Go read her story on her blog, The Fit Bee, because it’s inspiring and she is AMAZING and she has lost a whopping 91 pounds!
Anda, from Leaving Fatville came up with the most amazing concept and recently launched a brand-new website. It’s called the Great Clothing Exchange, and you might have guessed from that name that it’s a place to exchange clothes. All of us know how it is to shrink and shrink and shrink some more. As you go down with the numbers, so does your bank account because you have to buy new clothes to fit your new body. And then, what do you do with those now-to-big-clothes? Well, I’ve always donated mine, but now I can list them on the Great Clothing Exchange and give them a special new home! I can also look for smaller duds for ME! Genius, no?
Another one of our Sisters, Britt, walked her first 1/2 marathon last weekend – the Austin Livestrong Half Marathon! We are so very proud of Britt for finishing!! Go to her blog, Less Britt, More Life and check out her race recap!
I’ve been reading Run Like a Mother: How to Get Moving–and Not Lose Your Family, Job, or Sanity (a copy I borrowed from Lisa), and it has to be the absolute best running book I’ve ever read! Lisa reviewed it last year, if you’re interested in hearing what she had to say about it! I love it SO MUCH, that I am personally going to give away one copy to one lucky winner!

And this Crispy Buttermilk Chicken recipe in the Jan/Feb 2010 issue of Cooking Light is TO DIE FOR. Trust me. I made it for dinner last night, and it was so freaking easy, tender, juicy, and yummy!! My kids and I fought over who was going to get the last piece, and my son won! You might want to go ahead and double the recipe.
Crispy Buttermilk Chicken

Total: 4 hour, 20 minutes
Yield: 4 servings
Ingredients
4 (6-ounce) skinless, boneless chicken breast halves
1 3/4 cups whole buttermilk
1 large egg
3/4 teaspoon onion powder, divided
3/4 teaspoon ground red pepper, divided
1/2 teaspoon kosher salt
1 cup all-purpose flour
2 teaspoons black pepper
1 teaspoon celery salt
2 tablespoons canola oil
Preparation
1. Place chicken in a zip-top plastic bag. Combine buttermilk, egg, 1/4 teaspoon onion powder, and 1/4 teaspoon red pepper; add to bag. Seal. Marinate in refrigerator 4 hours.
2. Preheat oven to 425°.
3. Remove chicken from bag; discard marinade. Sprinkle kosher salt over chicken. Combine 1/2 teaspoon onion powder, 1/2 teaspoon red pepper, flour, black pepper, and celery salt in a shallow dish. Dredge chicken in flour. Place chicken on a wire rack.
4. Heat a large ovenproof skillet over medium-high heat. Add oil. Add chicken; sauté 4 minutes. Turn chicken over. Bake chicken at 425° for 10 minutes.

My modifications:
I did not have buttermilk, so I made my own. To make 1 cup of buttermilk, you measure out just under a cup of milk (I used 2%) and add in 1 tablespoon of white vinegar. I also did not use the ground red pepper, but substituted in some paprika. I also used white whole wheat flour as opposed to all-purpose flour. I skipped the putting the chicken on the wire rack (hello, something else to wash!) and I cooked it in my cast iron skillet and transferred it right into the oven, where it came out nice and brown and crispy.
