Recipe: Chewy PB2 Cookies

Happy National Peanut Butter Cookie Day!!!  What? You mean you didn’t know that holiday was happening today?  Well, now you do.

I love peanut butter cookies.  I make no apology for that fact.  I mean, seriously, what’s not to love?  It’s a cookie and the main ingredient is peanut butter! *swoon*  Of course, now that I’m in the process of shrinking my jeans, the high fat and calorie cookie recipe from my grandmother has started collecting dust.  These days I make Chewy PB2 Cookies using a recipe from the folks who created PB2, Bell Plantation.  These tasty cookies come in at only 50 calories each, so they won’t blow anyone’s effort to follow a healthy eating plan.  Enjoy!

Recipe: Chewy PB2 Cookies

Ingredients

  • 3-1/2 oz sugar
  • 3-1/2 oz packed light brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 Tbsp dark corn syrup
  • 1/4 cup water
  • 1 cup PB2
  • 6-1/4 oz whole wheat flour

Instructions

  1. Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper. In a medium-sized bowl, cream together both types of sugar, egg, vanilla, baking soda, salt, corn syrup, water and PB2. Beat until smooth. Add flour, beating until mixture is well combined. Dough will be very sticky. Drop tablespoon-sized balls onto prepped baking sheets. Press top of each cookie with a fork to make parallel lines; flattening cookies to about 1/3 to 1/2 inch thick. Bake cookies for 10 minutes, reversing pans midway through (top to bottom, bottom to top). Remove from oven, and transfer to a rack to cool. Yields about 30 cookies. Store in airtight container.

If you aren’t already familiar with PB2, it’s an all-natural peanut butter powder that has 85% less fat than traditional peanut butter.  You simply rehydrate the powder with water when you’re ready to use it.  It works great for recipes!  You can check their website for a store near you or to order online.

    ok…No, I had not heard of PB2 but I’m certainly gonna look for it and get some so I can make yummy PB cookies with only 50 calories! Yum!! Thanks for the recipe, Mel!

    When you say a cup of PB2 do you mean a cup of powder or a rehydrated cup? Seems like a lot of pb either way
