Recipe: Simply Satisfying Summer Salad

If you’re like me you’re always short on time in the summer yet you’re looking for something healthy, delicious, and simple for dinner … stressing on simple. Wrangling a little one that just learned to walk and keeping the three year old eating healthy food is itself a challenge let alone find a way to keep it interesting and simple for us as well.

When we’re looking for an easy and healthy option we resort to a salad with the summer fixings. I’m talking avocados, tomatoes, cucumbers, etc.

Simple Summer Salad

Ingredients

  • Chicken
  • Lettuce
  • Tomatoes
  • Cucumber
  • Avocado (may need 2-3~ days to ripen)
  • Weber Italian Seasoning
  • Light Dressing

Directions

  1. Marinade the chicken overnight if you’re chock full of time, otherwise no worries.
  2. Spice the chicken with Weber Italian Seasoning and throw on a real bbq grill or your favorite foreman style grilling device
  3. Wash & cut up all of the veggies
  4. Wash and spin out the lettuce
  5. Cut avocado in half (around the core), pop out the core with a spoon, slice the insides while still in the skin, scoop out the insides cleanly with a spoon. If you can’t cut it cleanly and simply your avocado may not be ripe enough.
  6. Layer on a plate … lettuce, cucumbers, tomatos, avocados, chicago and throw on a few slices of your favorite cheese if your feeling dangerous.
  7. Top if off with a nice lite dressing like a cucumber or a raspberry vinaigrette.

Bam, it’s ready to rock and roll. It’s healthy and simple with some great fats coming from the avocados, some protein from the chicken, and a whole lotta vitamins from the veggies. If my estimates are correct this comes in about:

323 calories … with 1/2 an avocado per serving and a 4-5 oz chicken breast
Fat: 17.8g
Cholesterol: 20.1mg
Carbohydrates: 20.1g
Protein: 26g

    This looks so awesome and FRESH! I just love a good salad in the summertime! I love the Italian dressing with chicken. I use in the crockpot in the wintertime but never thought to use it on the grill. Thanks for sharing!
