Hello fine readers. How are you this beautiful (at least I hope it’s beautiful where you are) Sunday morning? Are you drinking your coffee and making out your grocery list? Well that’s convenient because if you look below, there a mess of healthy recipes and a grocery list. Plus, I don’t want you to miss out on spending hours and hours and hours of wasting time, I mean finding amazing things. True story.

Sunday, January 7th

I’ve never attempted a roast beef, but this Garlic Lover’s Roast Beef looks pretty fool proof! Not sure on a rare doneness, so I think I might go for medium. I’ll serve it up with some roasted new potatoes and asparagus.

Monday, January 8th

I’ve made this General Tsao’s (how do you really spell that anyway?) Chicken so many times, I could probably do it with my eyes close. Almost. I’ll serve it with steamed brown rice and steamed broccoli. There won’t be much leftover.

Tuesday, January 9th

I’ve never made this Mexican Tortilla Pizza, but it looks too good to pass up. I used to L-O-V-E Taco Bell. Now, I don’t go there so much. Now I can have a little bit of it at home! I’ll lighten up the recipe a bit by using low-fat cheese and fat free refried beans.

Wednesday, January 10th

I made this Crockpot Honey-Sauced Chicken last week and OMG. So easy, so yummy. There weren’t any leftovers. The kids loved it and so did I! Will be served over brown rice with steam green beans.

Thursday, January 11th

Leftovers (if there are any left) or whatever I can throw together fast!

Friday, January 12th

I look forward to going out to dinner all week. This mama needs a break from the dishes!

Saturday, January 13th

I know by Saturday I’ll be looking for some comfort food, so instead of indulging in something horrible and fried, I am going to make this Baked ‘Fried’ Chicken. The recipe says it tastes just like KFC. We’ll see! I’ll serve it with some garlic mashed potatoes and maybe a salad.
