Recipe: Dijon Shrimp

RecipesI’m a huge fan of seafood, especially shrimp.  It’s one of my favorite types of seafood to cook at home because it’s quick, easy, and is a great fit with my Weight Watchers food plan.

I recently came across this recipe for Dijon Shrimp.  Unfortunately, I don’t remember exactly where I found it, but it’s quickly become a favorite of mine.  It’s so quick to prepare that it’s become one of my mid-week staple recipes since I’m generally crunched for time during the week when it comes to cooking.

Dijon Shrimp

Yield: 4 servings

Calories per serving: 157

Fat per serving: 5

Dijon Shrimp

Weight Watchers PointsPlus value per serving: 4

Ingredients

  • 1 pound raw shrimp, cleaned and deveined
  • 2 tbsp butter
  • 3 tbsp Dijon mustard

Instructions

  1. In a pan, melt butter and combine with mustard. Cook until bubbly. Add shrimp and cook until pink.

    Anything with butter and shrimp has got to be good! And I LOVE LOVE LOVE dijon mustard! I can’t wait to get some fresh shrimp and try this!

      The original recipe called for light butter/margarine, but I’ve pretty much gotten to the point that I’d rather use the real stuff.  It didn’t really make that big of a difference PointsPlus or calorie-wise, so I just went with it. :)  If you do go with the light option, it lowers the PointsPlus value by 1.  As for the mustard, I made mine with the Grey Poupon White Wine dijon.  Heavenly!
