It’s Cinco de Mayo- Ole!!!!

First, a quick history lesson on what Cinco de Mayo actually is.  According to History.com, “Cinco de Mayo—or the fifth of May—commemorates the Mexican army’s 1862 victory over France at the Battle of Puebla during the Franco-Mexican War (1861-1867). A relatively minor holiday in Mexico, in the United States Cinco de Mayo has evolved into a celebration of Mexican culture and heritage, particularly in areas with large Mexican-American populations. Cinco de Mayo traditions include parades, mariachi music performances and street festivals in cities and towns across Mexico and the United States.”

A celebration of Mexican culture and heritage?  For me, that translates into drinking margaritas and eating copious amounts of Mexican food.  However, celebrating the Mexican culture and heritage does not mean I have to sabotage the daily work that goes into maintaining my *trim* figure.  With a little planning, we can enjoy the food and drinks of a particular country without going crazy and packing on five pounds overnight.

And DON’T FORGET- EXERCISE today!  Me- I will be running in the morning and if I am feeling ambitious, I will make it a 5 mile run in honor of Cinco de Mayo : ).

Will you be making and/or enjoying any Mexican dishes today? If so, what?
