Ok, let’s try this again. I had a lovely post all typed out for you, and such is my luck, it didn’t save and got erased. Cue death glares and mean words directed at the computer. Deep breaths. Take 2. 

There’s something about fall food that I love more than any other! Decadent chilis, plump squashes, baked goods, and of course pumpkin everything.

I write this as I have my first (and only) home-grown spaghetti squash in the oven. Squashes are so versatile and amazing that I can’t get enough of them. This last week, I did realize, though, that not everybody has been privileged to a perfectly browned spaghetti squash with homemade marinara sauce, or a wonderfully seasoned butternut squash. My roommate made this abundantly clear as she pointed to my spaghetti squash on the counter and asked “What is that?!”

Fall & Winter Squash is a wonderful way to add a variety of flavor to soups, stews and sauces without adding an abundance of calories – they are versatile and easy to cook, which are both big pluses in my book.

Since ’tis the season, here are some of my favorite recipes:

**Acorn squash stuffed with chicken sausage, browned apples, kale and quinoa.

**Butternut squash chipotle chili – this has become a staple and I  make it often.

**Baked spaghetti squash with homemade veggie marinara (so much garlic and so many veggies go in mine).

**Butternut squash mac n cheese – talk about comfort food!

**Not squash related – Gingered sweet potato & carrot soup – I’ve made this soooo many times and it always turns out wonderful (also, only 126 calories per serving).

**Roasted spicy pumpkin seeds – I toss mine in a little cayenne pepper for a kick.

(Also, I might have a slight pumpkin pie addiction….)

I’m always on the search for new recipes, and I know you have some phenomenal ones! Share them in the comments – others may gain inspiration from yours, as well. Additionally, I just received my very first crockpot/slow cooker for my birthday and am itching to make EVERYTHING in it – hit me with your favorite meals!
