Recipe: Sausage Pepper Pasta

I’m no cook. I try, but really I’m more of a Preparer. Or a Combiner.
Yeah. Combiner. That’s what I am. I like to find recipes with the fewest number of ingredients so that I have less of a chance to mess it up.
Which is why this is one of my favorite [...]

Mexican Meatloaf

I grew up hating meatloaf. It seemed like my family had it ALL THE TIME!
I understand now why. Money can be tight when you are trying to feed a family of 8 (I’m one of 6 kids) on a truck driver’s income. My mom needed to make meals that were easy and [...]

Spring Asparagus and Lemon Fettuccine

I love asparagus and this time of year it seems to be readily available and reasonably priced! This recipe is one I haven’t tried, but I do plan to make it this week. It sounds so fresh and light, but filling! I think I’ll substitute some Barilla Plus fettuccine noodles in place of regular because [...]

Lasagna

I found this recipe in my Taste of Home Comfort Foods Diet cookbook. It’s an awesome cookbook, and this recipe is the BOMB! Seriously, who knew lasagna could be healthy, and if it’s healthy, it certainly won’t taste good, right? WRONG!! Trust me on this one. My son (5) and daughter (17 months) gobbled it [...]

Lentil & Sweet Potato Stew

I was just reading through my new Whole Living magazine and came across an article on Eating Right for Under $15.  One of the recipes sounded really good, and although I haven’t tried it, I thought I’d share it with y’all. This yummy-sounding recipe packs in 18 grams of fiber and a whopping 19 grams [...]

Parmesan Mashed Potatoes

Oh, I am a sucker for mashed potatoes! Yes, you can eat mashed potatoes when you’re dieting. And you can eat them without worry!
I’ve tried several light recipes and they just never seem to fit the bill. I like creamy and flavorful (um, see above!) and this recipe really delivers. The freshly grated Parmesan cheese [...]

Greek Salad with Creamy Feta Dressing

This salad is SO good, but it tastes like it’s so bad. In other words, it doesn’t feel like I’m dieting when I eat this salad. The dressing is so creamy and unlike most “light” dressings, and it keeps well in an airtight container in the fridge for a couple of days.
