Green Curry Chicken Soup

I LOVE Thai Food.
Unfortunately, it does not love my muffin top (or maybe loves it too much, it likes to hang out there, set up camp, chill). Thai food can be SUPER unhealthy. Lots of high fat ingredients, lots of frying. Lots of rice.
One of my very favorite dishes is green curry. Coconut milk, lime [...]

Gather:

1/4 cup of olive oil
3 tablespoons [...]

Lasagna

I found this recipe in my Taste of Home Comfort Foods Diet cookbook. It’s an awesome cookbook, and this recipe is the BOMB! Seriously, who knew lasagna could be healthy, and if it’s healthy, it certainly won’t taste good, right? WRONG!! Trust me on this one. My son (5) and daughter (17 months) gobbled it [...]

Delicious, Easy AND Low-fat!

One of the things we all struggle with while trying to lose weight is eating in moderation.  Above that?  Eating in moderation during the holidays.  Holiday get togethers are traditionally centered around food, which pretty much sucks because it’s nearly impossible to turn down my sister’s cheesecake or my Mom’s potato salad, so I’m not [...]

Greek Salad with Creamy Feta Dressing

This salad is SO good, but it tastes like it’s so bad. In other words, it doesn’t feel like I’m dieting when I eat this salad. The dressing is so creamy and unlike most “light” dressings, and it keeps well in an airtight container in the fridge for a couple of days.
