Who doesn’t love TEQUILA?!! Lisa introduced me to this Weight Watchers recipe a couple of years back and I’ve been hooked ever since. It has a little more prep than I like, but the results are totally worth it. It’s great on the grill or in the oven and delicious with Spanish rice or a salad. Enjoy!
p.s. To turn the heat down, just remove the seeds from the jalapeno before blending. Seed=HEAT!

Tequila-Jalepeño Chicken

Serve this spicy Southwestern-style dish with a large salad on the side. Alternatively, you could toss some peppers, eggplant or zucchini onto the grill with the chicken. |

1/4 medium onion(s) |

2 tsp olive oil |
|
1/4 cup(s) fresh lime juice |
|
1 fl oz tequila |
|
4 large garlic clove(s) |
|
1 tsp unpacked brown sugar |
|
2 tbsp water |
|
1/2 tsp table salt |
|
1 medium jalapeno pepper(s) |

1 pound(s) uncooked boneless, skinless chicken breast |
- Purée onion through to pepper in a blender until smooth. Marinate chicken breasts for at least 1 hour. They can be marinated for several hours, if desired.
- Heat grill. Pat excess marinade off chicken and grill until cooked through, about 4 minutes per side.
- Serve with a fresh garden salad.
