The Sisterhood of the Shrinking Jeans LLC – Eating Right Because Our Jeans Are Too Tight

Lisa and the kids are here visiting and we’re having a great time!! It’s so nice to have them here. Our kids get along great and have so much fun together.

Lisa and I worked all week to plan our menu for her visit. Last night we had our first planned meal of shredded pot roast tacos. Early yesterday morning, I trimmed all the fat off the roast and put it in the crockpot with a package of Lipton Onion Soup mix and some water. Then, last night we took it out and shredded it with forks. We served it with corn tortillas, 2% shredded cheese, homemade salsa (thanks Lisa!!), Spanish rice, and Light Tostitos. I measured and weighed everything and our entire meal came out to 13.5 points. Not bad at all!!

Today we are lunching out and dinner tonight will be either leftovers or crockpot barbecue chicken.

Tomorrow, we’ll post the recipe for Lisa’s Spanish rice. It’s SO easy and delicious!
