I think 2010 has been the year of the cupcake. Everywhere I look I see them on clothing, jewelry, aprons and heck, even bloggy meet ups. Hence, I crave them. So while on a search for a lower fat cupcake I stumbled upon this sweet idea, a diet soda cupcake. Which after reading several different variations, it just so happens to only equal 2 WW points too. Nice huh?
Diet Soda Cake
1 box of cake mix
1 can of diet soda
(try diet coke with chocolate, diet sprite with a yellow cake or even a diet cherry 7up with a white cake. Endless possibilities here! )
1. Preheat the oven as directed on the box.
2. Gently stir the dry cake mix into a bowl of 10-12 oz of diet soda until well moistened. (Do not use the egg or oil listed on the box).
3. Line a muffin pan with cupcake liners and bake according to package instructions.
4. Let cool as usual and enjoy!
Try using low fat cool whip!
