I’ve kicked around the idea of posting a Menu Plan feature here at the Sisterhood, but WHO HAS TIME! I know that planning out a menu will make my life easier, will keep me from getting frustrated as I dig through the fridge each day, and it will be nice to share some new recipes with you too. Also, Lisa’s been nagging me to do it, so here goes!
Monday
Slow Cooker Honey Pineapple Chicken. It’s in the crockpot now, and I’m a little nervous. There’s a lot of sweetness to the recipe, and I’m wondering if it’s going to be overpowering? I plan to serve it over brown rice with steamed broccoli on the side!
Tuesday
We’ll have leftovers on Tuesday. Pot roast from Sunday, any chicken leftover from Monday, with a few other things thrown into the mix!
Wednesday
Pan-fried Chicken Fingers with Spicy Dipping Sauce. This one looks yummy, and even though I normally bake my homemade chicken fingers, I’m going to give this pan-fried recipe a whirl. I’m sure the kids will love it! Will serve it with either mashed potatoes or steak fries and a green vegetable.
Thursday
Leftovers again! Yes, since it’s just me and kids during the week, most recipes make double what we can eat, so we’ll be eating leftovers again tonight!
Friday
Chicken Piccata with Orzo. We love Chicken Piccata. So much. Over the holidays, I made the Pioneer Woman’s version, and we practically licked our plates. Okay we did, but OMG, totally not diet friendly, in any way, shape or form. I’m looking forward to trying out this lighter version! Will serve it with angel hair instead of orzo, and probably steam green beans.
Saturday
Creamy Swiss Steak. This is one of my all-time favorites from the Taste of Home Diet Comfort Foods cookbook. Everyone in my family LOVES it. This week, I’m going to sub chicken for the steak, and will serve it over whole wheat egg noodles with broccoli.
Sunday
Not sure what we’ll be eating on Sunday. Might be our day to go out to eat, or I’ll whip up something for the grill!
