I do love me a recipe that is quick, easy, and includes the vegetable in the recipe.

Tropical Chicken (Packets) definitely fits the bill. Cook this up and serve it over some brown rice and you are good to go.

Now, you’ll see below that the original recipe is actually set up for cooking out on the grill. But that’s not how I did it. Which is why I put the parantheses around the packets in the title.

Both times we have made this, we just set it up like a casserole. We just put the chicken in a Corning Ware dish, dumped the diced fruit and veggies and sauce on top, put it in a 400 degree oven, and walked away.

While the chicken cooked, we made the rice. 30 minutes later, dinner was on the table. Seriously, this recipe is so easy and so good. If you try it, let us know what you think!!

Tropical Chicken Packets

Ingredients

* 4 boneless skinless chicken breast halves (6 ounces each) * 1/8 teaspoon pepper * 1 can (20 ounces) unsweetened pineapple chunks, drained * 1 medium sweet red pepper, julienned * 1 small onion, sliced and separated into rings * 1/4 cup packed brown sugar * 1/4 cup reduced-sodium teriyaki sauce

* 1 teaspoon minced fresh gingerroot
