I have a short and sweet post for you. I just got home from a day in Chicago at the Self magazine Workout in the Park event. I had so much fun, but I am so tired and ready to soak in a hot tub for awhile.
What I have for you today is one of my favorite go to salads. It’s great for lunch or as a side with dinner. The best thing is that it is so simple to make. I found it in the Taste of Home Comfort Food Diet cookbook. Here’s how you make it.
1/2 large sweet onion 1 medium cucumber, sliced 2 cups grape tomatoes 1/2 cup loosely packed fresh basil leaves, sliced 4 ounces fresh mozzarella cheese, sliced
1/3 cup fat free Ialian salad dressing
