Can you believe it’s New Year’s Day and we have  brand new challenge starting TODAY? That’s right. Check back here around lunchtime (you know, when that hangover is starting to fade), and get all the awesome details!

Sunday, January 1st – Chili – my husband’s secret recipe. And real Texas Chili does NOT have beans. Yo.

AND also on January 1st, for a prosperous New Year – Crockpot Black-Eyed Peas

Monday, January 2nd – We’re still out of school, and I’m sure we’ll have lots of leftover chili and black-eyed peas to eat!

Tuesday, January 3rd – We’ll definitely be tired of leftovers, so I’ll freeze up whatever is left and make this yummy and light Pepper Corn Chowder today. I might make a fresh batch of cornbread to go with.

Wednesday, January 4th – Wednesday are our late nights to get home, so having these delicious Crockpot Italian Turkey Meatballs will be so nice. I will be subbing in some ground venison, because our freezer is full of it right now. Will be served with either steamed broccoli or a quick tossed salad.

Thursday, January 5th – Seared Chicken with Tomatillo-Avocado Salsa – don’t let the long name fool you, this recipe is a cinch to pull together and oh-so-yummy!! I’ll probably serve it over some couscous.

Friday, January 6th – Meatball sandwiches using our Crockpot Italian Turkey Meatballs – served with a fresh green salad and baby carrots for the kiddos!

Saturday, January 7th – Out to dinner – Mama has the night off!
