Pasta Primavera with Chicken

My all time favorite Italian restaurant, Vinny’s, has cooked up a little dish just for me and the Sisterhood of the Shrinking Jeans. Well, I’m sharing it with you, so it’s for you too! I’m really good friends with the owners of the restaurant and one of them has been on and off of Weight Watchers for years and was kind enough to run the recipe through WW recipe builder and share it with me!

Points Value: 10
Servings: 6

Ingredients:

  • 3 Tbsp Worcestershire sauce
  • 3/4 c. grated Parmesan cheese
  • 3 Tbsp olive oil
  • 2 cloves of garlic, minced
  • 2 c. mushrooms, sliced
  • 2 c. bell peppers, diced
  • 2 c. tomatoes, diced
  • 12 oz. uncooked penne pasta
  • 12 oz. grilled chicken breast (already cooked)
  • salt & pepper to taste
  • 1/2 c. pasta water

Cook pasta according to package directions and drain reserving 1/2 c. pasta water. If you drain your pasta in a colander, you can run hot water over it when you’re ready to serve it.

In a large non-stick skillet, add olive oil and minced garlic. Saute for a couple of minutes over medium heat, being careful not to burn the garlic! Next add in mushrooms and bell peppers and saute for until soft. Add in tomatoes, Worcestershire sauce, and chicken, stirring to coat evenly. Finally pour in pasta water and turn the heat up just a bit to get things boiling for a minute. Reduce heat to low, add salt & pepper to taste. Toss finished sauce with cooked pasta, sprinkle with Parmesan cheese, and serve!

**When I order this dish, I have them leave out the mushrooms (gag!) and add in onions. It’s so delicious and it makes me happy because I can go to my favorite restaurant in town and still stay on plan. Now if I could just stay away from the bread.

I also think if you used a whole wheat pasta or Barilla Pasta Plus, the points value could be reduced. You could also leave out the chicken or substitute shrimp. Go crazy!!**

    I made this the other night and it was yummy! I made 3 changes and brought the points down from 10 to 7. I used 1 tsp. olive oil, whole wheat penne and just 1/2 cup parmesan cheese. My stepson picked out all the mushrooms, but other than that he and my husband liked it too. Thanks for sharing the recipe!
