Lighter Chicken Enchiladas

I love Mexican food and I love enchiladas.  However, I don’t eat enchiladas very often because OMG, that fat and the cheese and the FAT.
Until now.
For a brief while, I had a free membership to Cook’s Illustrated.  During that time, I printed out as many recipes as I had time to.  This is one of [...]

Recipe: Baked Shrimp with Tomatoes and Feta

I have just recently started eating shrimp.  I’ve never been a fan of shellfish, fish, crustaceans, or any other word for things that inhabit water.  But, I’m learning, because it really is a low-fat healthy way to get some good protein in you.
I found this recipe in the January 2009 issue of Fitness Magazine. The [...]

The Saturday Review::Hershey’s Dark Products

Did you know that in addition to February being Heart Health Month, it’s also National Chocolate Month? When Hershey’s contacted us about doing a review for their Hershey®’s Dark products, I actually paused before I shouted YES, and then I decided to take one for the team.
You’re welcome.
Are you familiar with Bob Greene and his Best Life [...]

Thursday Three’s: The Food Edition

I am so excited to write this Food Edition of Thursday Threes!
I love food- what “free” time I have is spent scouring websites, cookbooks, cooking magazines, looking for those recipes that sound interesting to me.  I love to cook and I love to eat.  These two simple phrases makes it imperative for me to find [...]

Recipe: Sausage Pepper Pasta

I’m no cook. I try, but really I’m more of a Preparer. Or a Combiner.
Yeah. Combiner. That’s what I am. I like to find recipes with the fewest number of ingredients so that I have less of a chance to mess it up.
Which is why this is one of my favorite [...]

Your Breakfast Will Be Delicious: Applesauce Oatmeal Muffins

Your breakfast will be delicious tomorrow (or later today), I promise. You just have to make these muffins.
This recipe is a staple in my home and my children love it. I found this recipe for Applesauce Oatmeal Muffins on Spark People when I was diligently logging my calories (which I shall begin doing again as [...]

Makeover Cornbread Dressing

I don’t know about you, but cornbread dressing is THE reason I look forward to Thanksgiving. Okay, so I really look forward to ALL the food. Seriously. I grew up in a family where traditions are strong, especially traditional holiday meals. My grandma always, always made homemade cornbread dressing, and I was by her side [...]

A Lighter Take on Jambalaya

I first made this recipe during the summer. It is an adaptation of an Ellie Krieger recipe from her show on Food Network, Healthy Appetite with Ellie Krieger. The biggest draw for me? One pot. Easy clean-up.
That is a great thing.
There was one problem with the original recipe, for me at least. I’m not a [...]

White Bean & Poblano Chicken Chili

The weather (here, at least) feels like autum. That means – SOUP!
This one is a favorite around our house. I’ve modified the original recipe from the Zolo Grill slightly to make it more points friendly. At eight, it’s not super light, but it’s filling. The cheese and sour cream do add to the [...]

Crock Pot Chicken Stroganoff

This recipe doesn’t need much explaining!  It was ridiculously simple and easy and my children LOVED it, including the baby.  This one will become a staple in our house, that’s for sure.  I made absolutely ZERO modifications because um, I didn’t need to.

Lemon-Ginger Fried Chicken

You guys are gonna hate me for this one.
Here, I present to you, a “light” version of fried chicken.  ‘
It’s kind of an oxymoron, isn’t it?  Putting the word “light” right next to “fried”?  But sometimes, an occasion or your taste buds just scream for something fried, don’t they?  Life sure does get boring eating [...]
