Banana Muffins

Recently, I was craving something slightly sweet, a bread or muffin, but also low in calories. I perused old recipes that I had saved from Weight Watchers Community Message Boards from YEARS ago. I ran across this one, had all the ingredients on hand and decided to give it a whirl.

Boy, am I glad I did!

This muffin was moist, flavorful, delicious, AND low in points. Since I am following Weight Watchers right now, every single food item that is low in points and tastes good becomes my “new best friend”. This recipe is no exception and I envision serving it Thanksgiving morning or whenever we have company over. Next time, I may spray the liners with cooking spray as the muffins “stuck” a little bit to the liner.

Banana Muffins

12 Servings~~1 Weight Watchers points each

Ingredients

  • 3/4 cup of all-purpose flour
  • 3/4 cup whole wheat flour
  • 1/4 cup brown sugar
  • 1/2 cup Splenda
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup Eggbeaters
  • 1 cup banana, mashed
  • 1/4 cup applesauce

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Place cupcake liners in 12 muffin slots.
  2. In a large bowl, stir together flour, sugar, baking powder, baking soda and cinnamon. Add egg whites, bananas and applesauce; stir just until combined. Equally divide batter into 12 muffins.
  3. Bake in preheated oven for 50 to 55 minutes, until a toothpick inserted into center of muffins comes out clean. Turn out onto wire rack and allow to cool before slicing.

    This sounds good! (I don't like bananas but everyone else in my life does so I find myself baking with bananas all the time even though I can't stand the smell of them, haha!) Anyhoo, these give me an excuse to start baking with Splenda (I might switch out the banana part though!) Thanks for the recipe, one point! Wow!

    I think I'm gonna try these with egg substitute that my egg allergic son can eat. All I need to do is go buy some wheat flour! They sound yummy!!

    I made these this morning… but the baking time is off :) I think the baking instructions part may be if you are making it into a loaf instead of muffins….

    You are TOTALLY correct, Kristin. The original recipe was to make it as a LOAF, but I made it into muffins and forgot to edit the baking time when posting.

    How long did you bake for? I wanna say it was maybe 10-12 minutes- does that sound correct?

    Honestly… I set the timer for 50 minutes not even thinking about it… and about 30 minutes in the muffins started to 'smell' done, so I toothpicked them and they were done… but honestly, I would say start with 10 and go from there… they were good even over done, but they didn't come out of the wrappers none to easy…

    Try putting them in the fridge for a short while and then I think they will
    come out of the wrappers a little easier!

    Thanks for excellent recipe. My mom has diabetes and is always stealing sweet goodies.
    She loves bananas so maybe I may incorporate into a low calorie low sweet dish for her

    This was so yummy!! I already made two batches and I will be going back to make 2 more!! The only difference ~ I don't use egg beaters so I used real eggs and I used the muffin papers for the first batch but so much got stuck that I just sprayed the muffin tins with pam! I also used Splenda Brown Sugar blend! yummy!! (with my switch muffins are 2 points each but so worth it!!)
