Okay, I don’t totally agree with the title of this recipe (from WW online), and I totally added my own twist to it too! The original recipe doesn’t call for it, but I can’t imagine it without the salsa!
I’ll call it Crockpot Chicken Ole’
Ingredients
11 oz uncooked boneless, skinless chicken breast | |
14 1/2 oz canned black beans | |
8 oz fat-free cream cheese | |
11 oz Green Giant Niblets Corn, Canned | |
16 oz Tostitos Salsa- Medium
Throw all ingredients, except cream cheese, into a crockpot and stir. Set the crockpot to cook on low for 6-8 hours. About 20 minutes before you’re ready to serve it, toss the cream cheese in and let it melt. Then stir good and serve. And that’s it. I typically shred the chicken with a fork and serve it over Spanish rice with a green salad and some Light Tostitos chips. Double YUM! My whole family loves it! |
