Crock Pots have been all the rage as of late…there have been all kinds of pages popping up on Facebook. Crock Pot Girls, Crock Pot Guys, Skinny Crock Pot are a few I’ve been following.
It really is undeniable – the crock pot can be a great tool for creating inexpensive, healthy meals.
I’ve tried quite a few new crock pot recipes in the last month or so, and my very favorite is Green Tomatillo Chicken. I seriously can’t stress how absolutely delicious this is…try it! I bet it just might sneak into your regular meal rotation!

6 boneless chicken breasts 1 medium onion sliced 2 cloves garlic, minced 1 tsp cumin 1 tsp oregano 1 tsp salt 1 tsp pepper 1 Tbs lime juice 1 jar tomatillo salsa (whatever brand you like, I’ve used Herdez and Trader Joe’s)
1 1/2 low fat or fat free sour cream ( you can also sub in plain fat free yogurt)
